- Smoked Bacon & Spring Cabbage
A delicious way to eat cabbage (even for those who doubt it!) - our smoked bacon is the perfect complement to spring cabbage!
Prep time: 10 min Cook time: 20 minutes | Serves: 4-6
1 Whole Spring Cabbage (chopped)
5 Rashers smoked dry cured streaky bacon (chopped)
300ml Vegetable Stock
Seasoning to taste
Chop the cabbage and set aside (keep the darker green leaves separately), heat a tablespoon of oil in a heavy based frying pan, add chopped bacon and fry for a few minutes. Next, add the darker green cabbage leaves (these take a little longer to cook) together with 100ml of the stock. Cook on a simmer covered for 3 minutes. Stir and add the remaining cabbage and 100ml stock. Cover and cook for 10-15 minutes, checking that the cabbage doesn't become too dry - add stock as necessary. Don't overcook the cabbage.
Season to taste and serve.
